Cairns trio are Australia's best bakers

Three Cairns bakers have won the highest accolade in the Australian baking industry.
TNQ TAFE Cairns Bakery teachers, Nevon Sachse and James Saulder, teamed up with Jana Ludwig the owner of The Gingerbread House & Bakery in Cairns, to compete against the best bakers and pastry cooks in Australia.
The trio teamed up against eight other teams for the 4th annual Australian Artisan Baking Cup at the Foodservice Australia Trade show held in Sydney from June 21 to 23.
TNQ TAFE Institute Director, Joann Pyne, said she was proud of the team for winning such a prestigious award.
"It was an incredible feeling to have our trainers compete with the very best in Australia and to actually win at the Artisan Cup. It's fantastic," Ms Pyne said.
Team Cairns spent several weeks leading up to the event creating a winning menu featuring a satay chicken Danish as one of their signature items, a laminated brioche with rosemary and rhubarb, a variety of sourdough breads, Stollen, and a Light Horseman Centrepiece made of bread.
Team Captain Nevon Sachse said everything worked well on competition day due to a lot of careful planning and preparation.
"James' Light Horseman centrepiece wowed the judges and Jana won in the Stollen category," Mr Sachse said.
"I feel it's important for the baking industry to have representation from the Far North.
"Our retail baking training program in Cairns is highly regarded by locals and international students. Now we can add that the course is run by two of the best bakers in Australia," he said.
As National Champions, Team Cairns will become Team Australia. Next step for the team is to compete in Rimini Italy in the 2011 SIGEP - International Exhibition Artisan Production of Gelato, Pastry, Confectionery and Bakery.
